Spice: Garam Masala Powder
|
|
Garam masala is a wonderfully aromatic blend of spices from India. Garam means "hot" or "heating" and masala means "spice blend". The "hot" is not necessarily referring to the kind of heat we find in hot chillies but to the fact that the spices are first toasted then ground. Another explanation we've heard is that the amalgamated effect of the spices in garam masala increases body temperature, a pleasant warm glow you might feel after eating a dish flavoured with it. It does however usually include some black pepper and cinnamon or cassia which carry some heat.

Pathiri is a soft bread made from the South Indian state of Kerala. Crushed rice is made into a white dough and baked on pans called oadu. After preparation, sometimes pathiri is soaked in coconut milk, to keep it soft and to improve the taste.

In India, these delicious babas are called "gulab jamun", meaning "rose balls", because the syrup in which they are soaked
is delicately scented with rose water. This recipe originates from the province of Bengal on India's east coast.

but not excessively so. It is particularly suitable for a special occasion and in India it is often served at weddings.

This delicious chicken recipe is very easy to make. Its name comes from the word tandoor, a a cylindrcal clay oven fired to very high temperatures with
wood or charcoal. Indian cooks use it for cooking braised and marinated meat dishes, or tandooris. These are often cooked at the sane time as breads, such
as roti and naan. This method of cooking has spread throught the north of India.
